Please note that the researchers are referring only to Celiac disease and their conclusions don’t include those with sensitivities/immune responses to other parts of wheat. When these people are included, the extent of wheat/gluten sensitivity becomes an even larger undiagnosed population. It’s simple to check: just eliminate all wheat and gluten (including spelt, kamut, barley, and rye) for at least one month (ideally for 6 months), then eat some and monitor your response.
