Undiagnosed Celiac Disease Prevalent

A study conducted by Mayo Clinic finds that Celiac disease is largely undiagnosed.  This is an article from the NY Daily Times.  On the Natural Family Medicine facebook page, you can find a link to the Medscape article.  Please note that the researchers are referring only to Celiac disease and their conclusions don’t include those with sensitivities/immune responses to other parts of wheat.  When these people are included, the extent of wheat/gluten sensitivity becomes an even larger undiagnosed population.  It’s simple to check:  just eliminate all wheat and gluten (including spelt, kamut, barley, and rye) for at least one month (ideally for 6 months), then eat some and monitor your response.
